Five Pounds of Costco Mussels

First rule: find out what day your local Costco gets their mussels delivered. I went last Thursday and asked if they had any in stock. The guy said they were in, but needed 5 minutes to get them out on the floor. I waited. Well worth the wait.

Second rule: eat ‘em that night. Barb cleaned and rinsed the mussels. Not much work because they are usually quite clean. She prepped some shallots, tomatoes, garlic, some red pepper flakes, a glass of dry white wine, 2 tablespoons of sweet butter and olive oil. I call that “mis-en-place”. It’s a restaurant thing. I used to do it before I saw each dental patient. Makes things go smoothly.

A nice dry wine. Finish the bottle with dinner.
Sautee the aromatics in a very large and deep pan. After the shallots are soft, pour in all the mussels. Cover with foil. Put into 500 degree oven for 15-18 minutes. Take them out and the mussels should all be open.

Chop up and add parsley or cilantro. This was cilantro.

This is a bowl of pristine mussels. Eat them all…all five pounds…two person limit. Don’t be a wimp. And wash it down the wine you cooked with.

Low calorie, delicious, filling meal. No need for dessert. Drink the broth. SWEET!
