Tonight’s a night to eat at home. It’s something we do at least four times a week. That said, it doesn’t mean we won’t eat well. I’m a lucky guy being married to a woman who, like great chefs, sees a good ingredient and turns it into a great meal.
Two days ago we were in a local supermarket and they were having a sale on Swai. This is a simple fish, very similar to Tilapia. It’s light and flaky and can be fried, sautéed, baked or roasted. Also, it’s usually quite tasty.
Naysayers have plenty to say knocking Swai. It’s farmed and shipped frozen from Vietnam. Who knows how it’s raised or what it’s fed. I can only imagine how they are able to raise, ship and sell Swai for $5 a pound on sale here in Florida. So I work hard at stifling my imagination.
Tonight Barb roasted it with lemon and capers. I nuked up a bag of Uncle Ben’s ready rice in 90 seconds. She made herself a salad to keep it healthier and fresh and I made guacamole using a ripe avocado and some store brand Pico de Gallo.
We had some leftover Côtes du Rhône that I picked up at Costco for somewhere between $8 and $12. If you see this wine on your next trip to Costco, jump on it.





This whole meal cost us under $20 and took no time to make. If you don’t have a problem with farmed fish and wanna eat cheap and good (I know that’s poor English), give this meal a shot. My daddy used to say: “Eat well. It’s the best revenge!” Whatever that was supposed to mean, I find myself agreeing.
