Simple, Cheap, Delicious at home

Barb and I are getting ready to move and are clearing out the house and simplifying our lives. Nonetheless, Josh has got to eat and drink and we can’t go out every night. Stopped at the Pennsylvania Dutch market in Newtown yesterday for some fish to cook on the grill. They had trout that was cleaned and ready to cook for about $10 a pound at the fish stand. Next to that stand is the prepared food stand that has some really excellent choices (along with some bizarre and mediocre foods). I love their creamed spinach. It’s a comfort food from my youth. (Family dinners at Horn and Hardarts. They also had wonderful Mac and Cheese.)

At home I turn the grill on to medium and let it preheat. Barb prepares the trout by putting it on heavy duty foil, sprayed with Pam, skin down. Lightly oils (evoo) the flesh and seasons with salt and pepper. I spray a glass bowl with Pam and pour in the creamed spinach.
Whew, so much work. I’m “plotzing ”!!!

I put the foil with fish on the grill and closed the top. Six minutes for 1 pound, three filets. Then I took it off the grill. I had nuked the spinach for 3 1/2 minutes, mixing it halfway through. (Can you believe how hard I’m working here?) Also pulled an inexpensive white out of the fridge. Opened it. (I’m diein’ here!) Plated and ate. Barb, of course, had broccoli because, you know, it’s a healthier choice. I’m not so smart.

Muscadet from France was a good choice. Dry and about $12.

The whole meal, including wine, cost about $24. Fresh fish dinner. Try doing that at a restaurant.
