Mitsuba Japanese Cuisine in Chatham, NJ

Barb and I are staying with our daughter’s family in Summit, NJ while we wait for our apartment to come available. We have volunteered to act as part time Au Pairs. Not a difficult job when you get to spend significant time with your grandchildren.

So the last two Friday nights we have had the night off to dine alone and we went to our kids’ favorite sushi place, Mitsuba. The kids usually take out from there, but Barb and I feel that sushi is always best when eaten at the restaurant.
Our server both times has been a very nice and informative lady named Levy. She spent time both weeks discussing the food there and answering our questions about other types of cuisine. The whole staff seems very friendly, from managers to table bussers.

When you order an entree they include a salad with house dressing and a bowl of Miso Soup. I’d recommend ordering the dressing on the side because they are very generous with it.
This is about half a bowl of soup. As usual, I impatiently started the soup before remembering to take a photo. Will I ever grow up?
Something we learned years ago at a James Beard dinner is that Pinot Noir is the ideal grape to accompany sushi. That is if you are not having Sake.
The Wasabi Shumai were plump, meaty, and sent a nice “zetz “ to our sinuses. A perfect starter for me.

For rolls we ordered the Mitsuba Roll which had Pepper Tuna, Salmon, Eel, and Avocado with spicy Wasabi eel sauce. We also had a Naruto roll without the Kani, which is an imitation crabmeat. The Naruto is made without rice and is rolled in cucumber.
This section of Naruto shows how beautiful the fish is and how nicely they present it.
This is their Sashimi Deluxe platter. It has a beautiful selection of very choice fish. We requested that they include some Yellowtail Belly, which was a true bonus. Presentation is very important with sushi because we “eat with our eyes as well as our mouths.” I’m a firm believer in this philosophy and apply it to all cuisines.
This sizable beauty came to the table next to ours. I asked if I could photograph it. They raved about it and said that order it every time they go to Matsuba, which is often. I,believe it was called Yuza. We will definitely order it on our next visit.

Matsuba is a wonderful sushi restaurant. Their fish is extremely fresh and delicious and presented beautifully. I love that it is byob. The service and ambiance is very pleasant. I highly recommend you try this restaurant. We have decided it will be a weekly stop for us. Thanks
